Our easy to make Spanish potato omelette can be made in under an hour and is a superb meal for people with diabetes!
This dish, in contrast to it's name, is actually a tapa and not served for breakfast! It can be eaten warm or cold. For added flavour, parsley and green onions have been included, but they can easily be omitted if you prefer the traditional simpler version.
